Farmhouse Slow Cooker Beef Stew Recipe

Ingredients

  • 1kg beef chuck steak, diced
  • 2 tablespoons plain flour
  • 2 tablespoons olive oil
  • 1 large brown onion, diced
  • 3 cloves garlic, crushed
  • 4 carrots, sliced
  • 3 celery stalks, sliced
  • 500g potatoes, diced
  • 2 tablespoons tomato paste
  • 4 cups beef stock
  • 1 tablespoon Worcestershire sauce
  • 2 bay leaves
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Optional Additions

  • Mushrooms
  • Parsnips
  • Sweet potato
  • Peas added at the end

Method

Step 1: Coat the Beef

Place the diced beef in a bowl and lightly coat with flour, salt and pepper. The flour helps create a rich, hearty gravy as the stew cooks.

Step 2: Brown the Meat

Heat olive oil in a frying pan and brown the beef in batches. While this step can be skipped, browning the meat adds wonderful depth of flavour. Transfer to your slow cooker.

Step 3: Add the Vegetables

Place the onion, garlic, carrots, celery and potatoes into the slow cooker.

Step 4: Add the Liquid

Mix together:

  • Beef stock
  • Tomato paste
  • Worcestershire sauce

Pour over the meat and vegetables.

Add the bay leaves, thyme and rosemary.

Step 5: Slow Cook

Cook on:

  • LOW for 8 hours, or
  • HIGH for 4–5 hours

The beef should become beautifully tender and easy to pull apart with a fork.

Step 6: Serve

Remove the bay leaves before serving. Ladle the stew into bowls and garnish with fresh parsley if desired.
